Cassava flour, also known as whole cassava flour, is a powdery product. Unlike cassava starch, it is made from the entire cassava tuber, retaining the nutritional components of cassava and offering a more comprehensive nutritional profile than cassava starch.
Cassava Starch Processing Technology:
Jinghua Industry’s cassava starch processing equipment can be roughly divided into several stages: washing, crushing, dehydration, drying, and packaging. These stages are interconnected and can automate the entire production process.
1. Washing: This is a crucial step in cassava flour processing, even more important than cassava starch processing, because cassava flour does not have a subsequent water filtration stage. Any mud or sand present will directly affect the quality of the cassava flour, resulting in a high impurity content. Commonly used cassava washing equipment includes: a dedicated cassava drum-type peeling and washing machine, mainly removing mud and cassava peel from the surface of the cassava; a paddle-type washing machine, using bionic principles to powerfully remove mud and sand from the cassava; and a new type of cage-type washing machine, which further washes and rinses to improve the cleanliness of the cassava while also peeling it. Generally, cassava washing requires the use of multiple machines working in combination to achieve the desired effect.
2. Crushing: Cassava crushing differs from that used in regular cassava starch processing. Water should be added as little as possible or not at all during crushing, and a higher fineness is required. The crushed material is generally not filtered to prevent nutrient loss. To maintain its color, an anti-oxidation treatment can be applied during crushing.
3. Dehydration: To dry cassava flour, the crushed slurry needs further dehydration. Various dehydrators are available; small-scale operations can use a three-legged dehydrator, while larger operations can use a dedicated vacuum dehydrator or a scraper centrifuge to reduce the moisture content and improve drying efficiency and quality.
4. Drying: The drying of cassava flour is similar to that of cassava starch, but the process parameters differ. An airflow dryer can still be used, combining high-temperature gas with the wet powder to quickly remove moisture, resulting in dry cassava flour. This material is then sieved to achieve the specified fineness to become finished cassava flour, which can be directly packaged. If the required fineness is not met, it needs to be crushed again. Dry fuel can be firewood.
5. Packaging: The dried finished product is packaged according to different customer requirements and is ready for sale.
