I. Basic Principles of Cleaning
The purpose of cleaning: Primarily to remove mud and sand adhering to the outer skin of the sweet potato and to wash away the outer layer of the sweet potato tuber. Cleaning fresh sweet potatoes or dried sweet potato slices, which are used as raw materials for starch production, is fundamental to starch quality. The cleaner the cleaning, the better the starch quality.
II. Basic Principles of Crushing
The purpose of crushing: Sweet potato starch is mainly stored in the fleshy part of the tuber, with only a small amount stored in the inner skin. The purpose of crushing is to destroy the tissue structure of the sweet potato, allowing the tiny starch granules to be easily separated from the tuber. Starch released from the cells is called free starch; starch remaining in the cells within the residue is called bound starch.
Crushing is crucial in fresh potato processing, affecting the starch yield and quality. The requirements for crushing are:
1. To break as many cells of the fresh potato as possible, releasing more free starch granules;
2. Easy separation. It is not desirable for the pulp residue to be too fine, as excessively fine residue hinders the separation of starch from other components and increases the difficulty of separating fine residue.
III. Basic Principles of Screening
Sweet potato residue consists of long, thin fibers, which are larger in volume than starch granules, have a higher expansion coefficient than starch granules, and are lighter in specific gravity than starch granules. Using water as a medium, the starch slurry contained in the potato residue is further filtered out. IV. Basic Principles of Purification and Sedimentation
The specific gravity of mud and sand is greater than that of water, and also greater than that of starch particles. Based on the principle of specific gravity separation, using cyclone desanding or sedimentation methods in a flow channel can achieve relatively ideal results. However, the specific gravity of the yellow pulp is close to that of water and lighter than that of starch particles. Its shape is palm-shaped, and the longer the processing cycle, the greater the gelatinization properties, leading to sticking to the sieve and starch particles, making separation difficult. Therefore, fresh raw materials, a short process flow, and timely separation are required.
V. Basic Principles of Dehydration
The concentrated starch slurry still contains a considerable amount of water, and further dehydration is necessary before drying.
VI. Basic Principles of Drying
Currently, starch factories generally use starch airflow drying (also called flash drying). The entire process is completed in an instant, so the internal moisture of the starch particles does not have time to gelatinize before being dried, thus preventing gelatinization or degradation.
Airflow drying is a co-current drying process, that is, the co-current process of wet powder material and hot airflow, consisting of two processes: heat transfer and mass transfer. When wet starch comes into contact with hot air, the hot air transfers thermal energy to the surface of the wet starch, and then from the surface to the interior; this process is the heat transfer process. At the same time, the moisture in the wet starch diffuses from the inside of the material to the starch surface in liquid or gaseous form, and then diffuses from the starch surface through the gas film into the hot air. This is a mass transfer process. High-temperature airflow and wet starch are evenly exchanged in the drying tube, resulting in powdered starch, which can be packaged and stored after cooling.
